Asparagus & Cheese Tart KAREN KENNEDY

ingredients
ASPARAGUS & CHEESE TART
1 sheet store-bought puff pastry
6 ounces gruyere cheese (shredded)
6 ounces swiss cheese (shredded)
1 pound thin asparagus (woody ends removed)
1 lemon (zested)
Kosher salt and freshly ground pepper (to taste)
truffle salt (to garnish)
fresh dill (to garnish)

directions
Preheat oven to 400ºF.
On a clean surface, roll out puff pastry with a rolling pin to flatten. With a fork, prick the middle of the pastry sheet and bake for 10 minutes. Remove from oven.
Sprinkle the gruyere in the middle of the tart shell and line the asparagus on top of the cheese. Top with swiss cheese and sprinkle with lemon zest, salt, and pepper. Bake for 20-25 minutes or until golden brown.
Garnish with truffle salt, parmesan and dill and cut into squares to serve.
Tip: This tart would also be great with a soft cheese such as ricotta or goat cheese!
