Daphne’s super simple Bacon Wrapped Asparagus is so simple!
BACON-WRAPPED ASPARAGUS WITH HERBED GOAT CHEESE DIP
20 asparagus spears (ends trimmed)
2 tablespoons olive oil
1/2 teaspoon smoked sweet paprika
Freshly ground black pepper
10 strips bacon (halved lengthwise)
GOAT CHEESE DIP:
10 ounces goat cheese (room temperature)
1/2 cup chives (thinly sliced)
1/4 cup parsley (finely chopped)
1 clove garlic (minced)
2 tablespoons milk
3 tablespoons olive oil
1 lemon (zested)
Freshly ground black pepper (to taste)
Preheat the oven to 400ºF. Line a baking sheet with parchment paper.
Drizzle the asparagus with olive oil and season with paprika and pepper. Wrap each asparagus spear in bacon. Place on the baking sheet and bake until the bacon is crispy and asparagus is tender, about 7 minutes per side, flipping halfway through. Broil for the last minute of cooking to make the bacon extra crispy.
For the Goat Cheese Dip: Whip the goat cheese in the bowl of a stand mixer fitted with a paddle attachment or in a food processor. Remove to a large bowl add the chives, parsley, garlic, milk, olive oil, and lemon zest to make a smooth dip. Season with pepper and serve.
Tip: 1. To make this a fun side dish, make small bundles of asparagus and wrap in bacon to secure. Then bake and serve to your guests.
