One of the best birthday cakes ever!

ingredients
ICEBOX CAKE:
3 cups heavy cream (cold)
1/2 cup sour cream
1/2 cup confectioners sugar
1 teaspoon vanilla extract
1/2 teaspoon Kosher salt
105 TastyKake Birthday Cake Flavored Kake Chips (from about 5 bags)
HOMEMADE SPRINKLES:
2 cups confectioners’ sugar (sifted)
1 large egg white (room temperature)
1 tablespoon light corn syrup
1/2 teaspoon vanilla extract
1/4 teaspoon Kosher salt
Assorted gel food coloring

directions
For the Icebox Cake: In the bowl of an electric mixer fitted with the whisk attachment, combine the heavy cream, sour cream, confectioners’ sugar, vanilla extract, and salt. Mix on medium low to combine and then whip to firm peaks. Set aside until ready to use.
To Assemble: On the bottom of a 9-inch springform pan, arrange 21 TastyKake Birthday Cake Flavored Kake Chips in a single layer. Spread 1/5 of the whipped cream evenly over the cookies. Repeat this process until you have five layers ending with a layer of the whipped cream. Using a rubber spatula, smooth the top, cover with plastic wrap and place in the refrigerator overnight.
Run a sharp knife along the inside edges of the springform pan to loosen the cake and remove the sides of the pan. Garnish the top with homemade sprinkles, cut into slices and serve.
For the Homemade Sprinkles: In the bowl of an electric mixer fitted with the paddle attachment, combine the confectioners’ sugar, egg white, corn syrup, vanilla extract and salt. Mix until all of the ingredients are combined and the mixture resembles a glue. Divide into separate bowls evenly. Using a rubber spatula stir in the food colorings of your choice into each bowl. Transfer to separate piping bags fitted with a #3 piping tip.
On a sheet tray lined with parchment, pipe long thin lines making sure they do not touch. Repeat with all the colors and allow to sit in a cool dry place until dried through, about 24 hours.
Once dried, use a knife or bench scrapper to break up the sprinkles into desired size. Use immediately or store in a container for up to 2 weeks.
Tip: Get creative! Change up the shape and size of your sprinkles to fit your party needs!
