BISCUITS AND JAM
Carla made a delicious Apple Compote Filled Biscuits recipe on The Chew, a nice twist on the familiar biscuits and jam that’s been standard in most kitchens for a long time. Instead of spreading the jam on the biscuits at the dinner table, this recipe lets you put the jam inside the biscuit from the very beginning.

2 cups all-purpose flour (plus more for dredging)
3 tablespoons granulated sugar (divided)
2 teaspoons baking powder
1 teaspoon salt
6 tablespoons butter (cold, cut in half lengthwise, then thinly sliced into pats)
1 1/4 cups buttermilk
1 egg (plus 1 tablespoon heavy cream whisked)
3 pounds apples (peeled and cut into 1/4″ pieces)
1 cup granulated sugar
1/2 cup brown sugar
1 teaspoon ground cinnamon
1/8 teaspoon nutmeg (freshly grated)
1/8 teaspoon ground cloves
pinch of salt
