CHOCOLATE CHEESECAKE COOKIES
8 ounces cream cheese (softened to room temperature)
2 sticks salted butter (softened to room temperature)
1 1/2 cups sugar
2 1/2 cups all-purpose flour
2 cups chocolate graham crackers (roughly chopped)
Using an electric mixer, beat cream cheese, butter and sugar until light and fluffy. Add the flour and mix to combine. Add the chocolate graham crackers and fold into cream cheese mixture with a rubber spatula. Cover bowl with plastic wrap. Place in the refrigerator to chill for 1 hour.
Preheat oven to 350ºF. Line a baking sheet with parchment paper.
Scoop 2 tablespoons of cookie batter and form into a round disc. Place on prepared baking sheet. Repeat with remaining cookie dough. Bake cookie for 10 minutes, until the edges are golden. Remove and allow cookies to cool for 10-15 minutes. Remove cookies to a cooling rack.
