Olive Cracker Spread
•1/2 cup kalamata olives (pitted & finely chopped)
•2 tablespoons chives (sliced)
•1/2 bunch flat leaf parsley (chopped)
•1 orange (zested)
•1 teaspoon crushed red pepper
•1 package cream cheese (softened, 8 ounces)
•1 package whole wheat wafer crackers
•kosher salt and freshly ground black pepper (to taste)
1In a medium bowl, add the olives, chives, parsley, orange zest, crushed red pepper, and cream cheese. Season with Kosher salt and freshly ground black pepper and mix to combine. Remove to a ramekin or serving dish. Serve alongside whole wheat wafer crackers.
– Use spread on a ham or salami sandwich!
