An easy treat good for any day of the week.

2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
2 sticks butter (softened)
1 cup light brown sugar
1/3 cup sugar
2 large eggs
1 teaspoon vanilla extract
2 1/4 cups old fashioned oats
1 1/2 cups mini chocolate chips
1 cup sweetened coconut
1 cup mini pretzel twists (roughly chopped)
3/4 cup golden raisins

Preheat oven to 350ºF. Line a 9×13-inch baking dish with parchment paper, leaving a 2-inch overhang.
In a large bowl add the flour, baking soda and salt and whisk to combine.
In the bowl of a stand mixer fitted with a paddle attachment add butter, brown sugar and sugar and beat until light and fluffy, about 4 minutes. Add egg and vanilla extract and beat until just combined.
Add the flour gradually into the stand mixer and mix until just combined. Remove from the stand mixer, add the oats, mini chocolate chips, coconut, pretzel twists and golden raisins and fold to combine.
Remove to the baking dish and bake for 15-20 minutes until golden brown. Remove from the oven and allow to cool completely. Slice into bars and serve.
Tip: Cut bars, wrap in plastic and freeze for an easy weekday treat. Add your favorite trail mix ingredients to customize your trail mix bar.
