Chicken with 40 Cloves of Garlic CLINTON KELLY

Load up the garlic for this delicious chicken recipe!

ingredients
CHICKEN WITH 40 CLOVES OF GARLIC
4 tablespoons unsalted butter
4 tablespoons olive oil
8 bone-in, skin-on chicken thighs
40 cloves garlic (peeled)
1/2 bunch thyme
1 cup white wine
1 cup chicken stock
crusty bread (toasted, for serving)
Kosher salt and freshly ground black pepper (to taste)

directions
Preheat oven to 400ºF.
Preheat a large saute pan over medium-high heat and add the butter and olive oil. Season the chicken with salt and pepper. Add the chicken to the pan and sear skin side down until golden brown. Flip the chicken thighs and add the garlic cloves. Place in the oven for 15 minutes.
Remove from oven and remove chicken thighs to a platter. Return pan to the heat and mash half of the garlic cloves. Add the thyme and deglaze the pan with the white wine. Reduce the liquid by half and add the chicken stock to simmer for 5 minutes. Pour sauce over the chicken and serve with toasted bread.
Tip: Make a quick salad to serve on the side. Place the dressing in the bottom of the bowl and place lettuce on top. Right before dinner toss the salad together.
