Bourbon and Ice Cream? What could be better?!

ingredients
CINNAMON BOURBON PEACHES OVER ICE CREAM
6 ripe peaches (washed, peeled, pitted, sliced)
2 tablespoons butter
3 tablespoon bourbon (or to taste)
1 teaspoon vanilla extract
3/4 teaspoon cinnamon
1 tablespoon dark brown sugar
pinch of Kosher salt
vanilla ice cream (to serve)

directions
Heat a large saute pan over medium heat. Add the butter and allow to melt. Continue heating the butter until golden brown and nutty.
Add the bourbon, vanilla, brown sugar and cinnamon and mix to combine. Add the peaches and salt and mix to combine. Allow to simmer for about 5 minutes, until the sauce thickens and the peaches soften. Serve over vanilla ice cream.
Tip: Try serving over shortbread or pound cake!
