A great way to use up those left over pie crust pieces!

ingredients
CINNAMON COCOA PIE CRUST CRACKERS
flour (for dusting)
2 tablespoons granulated sugar
1/2 teaspoon cinnamon
2 teaspoons cocoa powder
leftover pie dough
1 medium egg (plus one tablespoon water)
2 tablespoons coarse sugar

directions
Preheat oven to 350º F. Line a baking sheet with parchment paper.
In a small bowl, whisk together granulated sugar, cinnamon and cocoa powder. Set aside.
In a small bowl beat together egg and water.
Place leftover dough on a lightly floured surface and roll into a rectangle until 1/4-inch thick.
Brush dough with egg wash and sprinkle with sugar mixture, and then sprinkle with coarse sugar. Using a knife or pastry cutter, cut dough into 2-inch by 2-inch squares. Place dough squares on baking sheet and bake for 10-12 minutes or until golden brown.
