Can’t get much better than a Classic Sloppy Joe!
CLASSIC SLOPPY JOES
1 tablespoon olive oil
1 pound grass-fed ground beef
1 small onion (peeled, finely diced)
1 small jalapeno (grated, optional)
1 clove garlic (peeled, minced)
1 green bell pepper (grated)
1 tablespoon smoked paprika
1 tablespoon tomato paste
2 cups whole peeled tomatoes (crushed with hands)
3 tablespoons honey
3 tablespoons Worcestershire sauce
4 potato rolls (toasted, optional)
Kosher salt and freshly ground black pepper (to taste)
Place a heavy bottomed saute pan over medium high heat. Add the olive oil along with the ground meat and brown, using a potato masher or wooden spoon to break up into smaller pieces. Season the meat with salt and pepper then add the onion, jalapeno, garlic and bell pepper. Cook, stirring occasionally until the vegetables are slightly caramelized, about 8 minutes.
Stir in the smoked paprika and tomato paste and allow to caramelize until color of tomato paste is rusty, about 1-2 minutes. Add the tomatoes, honey and Worcestershire. Season well with salt and pepper, then simmer the mixture for 20 minutes, allowing the tomatoes to cook down.
To Serve: Scoop a heaping amount of the sloppy joe mixture onto a toasted potato roll and serve.
Tip: Make ahead of time and freeze for an easy weeknight dinner!
