BACON WRAPPED PINEAPPLE
1 pound bacon
1 pineapple (skin removed, cored and cut in 1-inch cubes)
1 teaspoon paprika
2 limes (juiced)
store-bought mango chutney (to serve)
toothpicks (to assemble)
Preheat oven to 425??F.
Cut bacon strips in half crosswise. Sprinkle pineapple pieces with paprika. Wrap bacon strips around pineapple pieces and pierce with a toothpick to hold. Place on a baking sheet and bake for 15 minutes or until the bacon is crispy.
Remove from the oven, drizzle with lime juice and serve with mango chutney.
