Everyone loves a cheese ball! Make these for your next party!
MINI PISTACHIO CHEESE BALLS
1 (10 ounce) log goat cheese (softened)
1/2 cup pitted dates (finely chopped)
1 tablespoon fresh thyme (finely chopped)
2 cups shelled pistachios (finely chopped, to roll)
whole wheat crackers (to serve)
In a large bowl, add goat cheese, dates and thyme and mix to combine. Season with salt and pepper. Form into 20 1-inch balls, roll in pistachios and place on a baking sheet. Refrigerate for 1 hour.
Serve with whole wheat crackers.
