This sweet potato & chicken sausage hash is perfect for breakfast!

ingredients
SWEET POTATO AND CHICKEN SAUSAGE HASH
1 tablespoon olive oil
1 pound loose breakfast chicken sausage
2 medium sweet potatoes (diced)
1 small yellow onion (diced)
1 red bell pepper ( diced)
1 jalapeno (diced)
2 tablespoon fresh sage (chopped)
1/4 cup water
4 large eggs
kosher salt and pepper

directions
Preheat oven to 400ºF.
In a large cast skillet over medium-high heat, add olive oil and chicken sausage, using the back of a wooden spoon, break up the sausage into small chunks, cook until golden brown, about 5-7 minutes. Remove from skillet onto a plate. Into the same cast iron skillet, add olive oil, sweet potatoes, and onions, cook until slightly soft and golden brown, about 10-12 minutes. Add water, red pepper, jalapeno, sage, and browned sausage, mix to combine. Make 4 indents in the potato mixture, crack 1 egg into each indent, cover with foil and place in oven for 7-10 minutes.
Serve with your favorite hot sauce.
Tip: use your favorite kind of sausage!
