GUAVA-CHEESE HAND PIE BITES
1 large egg
1/2 cup guava paste (4 ounces)
1/4 cup flour (for dusting)
1 sheet puff pastry (thawed)
1/2 cup cream cheese (4 ounces)
flaky sea salt (to garnish)
Preheat oven to 375ºF. Line a baking sheet with parchment paper.
In a small bowl, beat egg with 1 teaspoon water. Set aside.
Place the puff pastry on a floured cutting board and roll out slightly using a rolling pin into a 10-inch by 10-inch square. Cut the puff pastry sheets into 2-inch by 2-inch squares making 25 squares. Using a fork, prick the dough.
Using a pastry brush, brush to lightly coat puff pastry square with egg wash. Place 1 teaspoon of cream cheese in the center of the lower half of the piece of dough. Top each with a 1/2 teaspoon of guava paste. Fold the top over to the bottom and press to seal. Use the prongs of a fork to seal the edges, then place the hand pies on the prepared baking sheet.
Just before baking, brush the top of each hand pie with the egg wash and a sprinkle of sea salt. Bake until golden brown, about 8-10 minutes. Allow to cool before eating.
Tip: If the dough is sticky or soft after forming the hand pies before baking, refrigerate for 20 minutes.
