ENERGY DATE BALLS
1 cup raw cashews
1 cup medjool dates (pitted, roughly chopped)
1/2 cup flax seed meal
1 tablespoon coconut oil
1/2 teaspoon salt
1/4 cup shredded unsweetened coconut
In the bowl of a food processor fitted with a blade attachment, pulse the cashews until they are crumbly. Add the dates, flax seed meal, coconut oil and salt and process until a sticky batter is formed.
Remove the mixture to a large bowl and form 12 balls. Roll each ball in shredded unsweetened coconut to finish. Refrigerate or freeze until ready to serve.
Tip: Swap out the cashews with any nut you’d like!
