Grilled Lamb Chops and Plums with Mint Pesto MARIO BATALI

ingredients
HERBED SALT:
1/2 cup Kosher salt
2 lemons (zested)
1/4 cup freshly ground black pepper
1/2 cup mint leaves (roughly chopped)
FOR THE GRILLED LAMB CHOPS AND PLUM:
8 lamb chops (trimmed and frenched)
8 tablespoons olive oil (divided)
1 pound plums (halved and pitted)
Kosher salt and freshly ground black pepper (to taste)
FOR THE MINT PESTO:
2 cups mint (leaves)
1 cup basil (leaves)
1/2 cup freshly grated Parmigiano-Reggiano
1/3 cup pine nuts
2 garlic cloves
1/4 cup olive oil
Kosher salt and freshly ground black pepper (to taste)

directions
For the Herbed Salt: In a small bowl add the salt, lemon zest, black pepper and mint and mix to combine.
For the Grilled Lamb Chops and Plum: Preheat a grill or grill pan to medium-high heat.
Rub both sides of the lamb chops with the herbed salt. Drizzle the lamb chops with 4 tablespoons olive oil and season with Kosher salt and freshly ground black pepper. Transfer the chops to the hot grill and cook, turning once, until medium rare, about 4 minutes per side. Transfer to a platter.
In a large bowl toss the plums with the remaining 4 tablespoons olive oil and season with Kosher salt and freshly ground black pepper. Place the plums cut side down on the grill, cook for 3 minutes until they are slightly charred and have begun to caramelize. Remove and transfer to the platter along with the chops. Serve with mint pesto.
For the Mint Pesto: In the bowl of the food processor add the mint, basil, Parmigiano-Reggiano, pine nuts and garlic. Pulse until chopped and while pulsing slowly add in the olive oil until combined. Season with Kosher salt and freshly ground black pepper to taste. Set aside until ready to use.
Tip: If you don’t prefer lamb, chicken or steak also work well in this dish!
