Grilled Mortadella and Goat Cheese Packets MARIO BATALI

A delicious addition to your antipasto!

ingredients
GRILLED MORTADELLA AND GOAT CHEESE PACKETS
12 slices mortadella (thinly sliced)
12 ounces fresh goat cheese
12 basil leaves
3 cups baby mixed greens
2 tablespoons olive oil
1 tablespoon red wine vinegar
Kosher salt and freshly ground black pepper (to taste)

directions
Preheat a grill or grill pan over high heat.
On a cutting board, lay out 4 slices of mortadella. To the center of each slice, spoon 1 ounce goat cheese and top with 1 basil leaf. Fold the mortadella over the cheese and fold in the sides to form a packet, secure with toothpicks. Repeat with the remaining ingredients until you have 12 packets.
Grill the mortadella packets for about 1 minute per side until lightly charred and the cheese has melted. Remove from the grill and remove the toothpicks.
In a large bowl add the mixed greens. Toss with the olive oil and vinegar and season with Kosher salt and freshly ground black pepper. Transfer to a platter along with the mortadella packets. Serve immediately.
Tip: Assemble the packets in advance, then grill right before serving at your party!
