The Chew had a celebration of Southern foods in the Kiss My Grits episode. Carla Hall shared one of her go-to solutions for making the most of that leftover or scorched cornbread.
In only the way hilarious Carla could, she explained how you can salvage burned dressing or use leftover crumbs to create a decadent presentation of Spoonbread Dressing. The trick is to crumble the bread first, and you can use other breadcrumbs to help replace some of the burned bits (or as a supplement if you’re making this using leftovers).
Make sure to watch your cornbread and/or spoonbread as it cooks. When it’s golden, it is time to take it out of the oven. But now you know how to turn a cornbread disaster into a spoonbread success story.

- 6 cups cornbread crumbs
- 4 tablespoons butter
- 1 yellow onion (chopped)
- 3 stalks celery (chopped)
- 2 teaspoons poultry seasoning
- 2 eggs (whisked)
- 1/2 cup chicken stock
- 1/2 cup milk
- 1 cup sour cream
- kosher salt and freshly ground black pepper
