LEMON CUCUMBER YOGURT DIP
2 cups Greek yougurt
2 tablespoons olive oil
1 lemon (zested, plus 1 teaspoon lemon juice)
3 tablespoons dill (chopped)
1/2 bunch scallions (thinly sliced on bias, white and light green parts only)
1/2 English cucumber (finely diced)
freshly ground black pepper (to taste)
feta cheese (crumbled, to serve)
1 bunch carrots (cut into sticks, to serve)
1 bunch celery (cut into sticks, to serve)
1 bunch radishes (quartered)
In a medium bowl, add the Greek yogurt, olive oil, lemon zest and juice, dill, scallions, cucumber, black pepper and stir to combine.
Sprinkle feta cheese on top of the dip and serve with vegetables and pita chips.
Tip: Pick your favorite vegetables, chips, or pretzels to serve with your dip!
