This Lemon Oil is perfect for almost any occasion!
1 cup olive oil
1 lemon (washed and cut into small pieces)
Place the olive oil and lemon in a blender and puree. Use a mesh strainer to strain the oil into a bowl. Pour the lemon oil into a mason jar and refrigerate for up to two weeks.
Tip: 1. Serve lemon oil over herb roasted potatoes.
Tip: 2. Reserve the pulp for other uses, such as a topping for pancakes.
