Have some leftover herbs? Try a compound butter!
LEMON-SAGE COMPOUND BUTTER
1/2 pound butter (softened)
1 small shallot (peeled and minced)
1/4 cup sage (chopped)
1/4 cup parsley (chopped)
1 tablespoon lemon zest
kosher salt and freshly ground pepper (to taste)
In a large bowl, add the butter, shallot, sage, parsley, lemon zest, salt and pepper and mix until combined.
Tip: Spoon onto a sheet of parchment paper, roll into a log, wrap in plastic wrap and freeze for later use.
