These little bites of heaven will prevent all the sour faces at your next party.
LIGHTENED UP LEMON SQUARES
1/4 cup unsalted butter (room temperature)
2 tablespoons sugar
3/4 cup flour
1/4 cup sweetened coconut
2 whole eggs
2 egg whites
3/4 cup sugar
1/2 cup lemon juice
1 tablespoon lemon zest
1/2 cup flour
powdered sugar (to garnish)
Preheat oven to 350ºF.
Coat an 8×8 pan with non-stick cooking spray. Cut two pieces of parchment long enough to hang off the sides of the baking dish. This will be used as handles later to remove the bars. Spray the parchment paper inside the pan with baking spray.
For the crust: In the bowl of a standing mixer, whip butter and sugar until combined. Add coconut, flour and salt and mix until it forms a dough.
Press dough into pan with floured hands. Bake until light golden, about 15 minutes. Remove and let cool.
For the lemon curd: In a large bowl whisk together all ingredients. Pour over prepared crust and bake for 15 more minutes.
Remove from oven and allow to cool before slicing.
Serve with a sprinkle of powdered sugar.
