Swap chicken for veal in this tasty parmesan recipe.
GRILLED VEAL PARMESAN
4 veal cutlets (pounded 1/4-inch thick)
2 tablespoons olive oil
1 cup marinara sauce (http://abc.go.com/shows/the-chew/recipes/basic-tomato-sauce-mario-batali)
1 ball fresh mozzarella (thinly sliced)
1/2 cup Parmigiano-Reggiano (grated to garnish)
1/2 cup basil (to garnish)
Kosher salt and freshly ground black pepper (to taste)
Preheat grill or grill pan over medium-high heat. Preheat broiler. Season veal cutlets on both sides with salt and pepper and drizzle with olive oil.
Place veal on grill and allow to cook until charred and cooked through, about 3-4 minutes per side. Remove cutlets to a baking sheet. Spoon marinara sauce over the cutlets and top with a slice of mozzarella cheese. Place under the broiler and allow cheese to melt, about 2 minutes. Remove and garnish with Parmigiano-Reggiano and fresh basil.
Tip: If you don’t care for veal, substitute chicken cutlets.
