MARIO BATALI Italian Bacon & Egg Bruschetta

Take your bacon & eggs to the next level with this delicious dish!

1 baguette (sliced 1/2-inch thick on a bias)
2 tablespoons extra-virgin olive oil
8 ounces pancetta (1/4-inch thick slices)
pinch chili flakes
1 large jar pickles
kosher salt and freshly ground black pepper
2 cups baby arugula
1/2 cup basil leaves
2 cloves garlic (peeled)
2 tablespoons walnuts (toasted)
1/4 cup extra-virgin olive oil
1/4 cup pecorino romano cheese (grated)
6 large eggs
kosher salt and freshly ground black pepper

step-by-step directions
Preheat grill or grill pan to medium-high heat.
Brush baguette slices with olive oil on all sides. Season with salt and pepper. Grill bread on both sides until nicely charred. Remove and set aside.
For the Soft-Boiled Pickled Eggs: bring a medium-sized pot of water to a boil. Add the eggs and cook for 5 to 7 minutes. Immediately transfer eggs to an ice bath. When completely cool, peel eggs. Remove the pickles from the pickle jar and reserve for another use. To the pickle jar, add the eggs and a pinch of chili flakes and close the jar. Let sit for at least 15 minutes.
For the Arugula Pesto: In the bowl of a food processor, combine the arugula, basil, garlic and walnuts. Pulse and chop until almost blended. With the food processor running, drizzle in the olive oil and blend until combined. Add the grated Pecorino Romano and pulse a couple times just to combine. The resulting pesto should be a little chunky and not too wet. Season to taste with salt and pepper.
For the Pancetta: place pancetta in a nonstick pan in an even layer. Heat over medium-high heat. Cook until crisp on both sides. Remove and set aside to a paper towel-lined plate. Continue with remaining slices of pancetta.
To serve, spread some arugula pesto on top of a piece of grilled bread. Top with a piece of crispy pancetta and half of a pickled soft-boiled egg.
Tip: pack up the eggs, pancetta, pesto and bread ingredients separately to keep ingredients fresh. Once you get to the picnic, unpack and allow everyone to assemble their own bruschetta!
