Try this sweet and delicious Pear Tartin!
MARIO’S PEAR TARTE TATIN
4 tablespoon butter
1/2 cup sugar
2-3 pods cardamom
1 teaspoon salt
4 pears (peeled, cored, quartered lengthwise)
1 Tablespoon brandy
1 sheet puff pastry (thawed)
all purpose flour (for dusting)
vanilla ice cream (to serve)
Preheat oven to 375ºF
In a large ovenproof non-stick saute pan, melt butter over medium-high heat. Once bubbling, add the sugar, allow to brown on medium-low heat for about 5 minutes. Add cardamom pods and stir in the salt. Add pears to pan cut-side down. Cook until the pears begin to caramelize and flip pears. Arrange pears in a circle. Remove from heat, pour in brandy and ignite using a lighter or tipping the pan towards the heat slightly. Allow flame to extinguish.
On a lightly floured surface, roll the puff pastry out to 1/4-inch thick. Top the pears with puff pastry and tuck the edges in. Transfer to preheated oven and cook for 15-20 minutes or until pastry is golden brown.
Place a platter that is larger than the pan on top and carefully flip platter and pan to reveal tarte. Serve with ice cream.
Tip: Perfect dessert when you are in a hurry, use whatever fruit is in season.
