Put a spin on a classic reuben sandwich and make it with smoked salmon!
SMOKED SALMON REUBEN SANDWICH
2 slices pullman loaf (1/2-inch thick)
2 tablespoons fresh ricotta
4 ounces smoked salmon (sliced)
3-4 tablespoons sauerkraut
2 tablespoons dijon mustard
1 tablespoon olive oil
1 tablespoon butter
Lay out two pieces of bread. On one slice, spread ricotta and top with smoked salmon and sauerkraut. On the other slice, spread the Dijon mustard. Close sandwich.
Place nonstick pan over medium heat. Add oil and butter. Once the butter melts, add the sandwich and cook until golden-brown on both sides, flipping once.
Cut in half and enjoy!
