SPICY BROCCOLI RABE & PROVOLONE SANDWICHES
2-3 tablespoons extra-virgin olive oil (divided)
2-3 cloves garlic (sliced)
1 bunch broccoli rabe (chopped into 1-inch pieces)
1 teaspoon chili flakes
1 tablespoon red wine vinegar
4 kaiser rolls (split in half, crosswise)
8 slices provolone cheese
1 recipe Calabrese Bomba(or store-bought)
salt and freshly ground black pepper (to taste)
Place a large sauté pan over medium-high heat. Add 2 tablespoons olive oil and garlic, sauté for one minute. Add broccoli rabe and chili flakes, season with salt and pepper. Sauté until tender, about 5 minutes. Add the red wine vinegar and cook until completely reduced.
Meanwhile, place a griddle or skillet over medium-high heat. Brush the split buns with some olive oil. Place the buns, cut-side-down into the pan and let toast until golden. Flip and place a piece of Provolone cheese on each cut side, toast for 1 more minute. Remove buns. Top bottom bun with sautéed broccoli rabe and a spoonful of Bomba Calabrese.
– Make a large batch of sautéed broccoli rabe. Use the leftovers to make different dishes, such as orecchiette with broccoli rabe sausage.
– Add the broccoli rabe to the pan and stir quickly to prevent garlic from browning. Brown garlic is very bitter.
