SPICY GRILLED CHICKEN WINGS WITH PICKLED PEPPERS
2 pounds chicken wings (tips removed, separated at joint)
1 tablespoon Kosher salt
1 teaspoon red chili flakes
1/4 teaspoon freshly cracked black pepper
2 teaspoons ground fennel seed
1-2 tablespoons olive oil
3 garlic cloves (peeled and minced or finely grated)
1 cup pickled peppers (such as pepperoncini, pickled cherry peppers and spicy red Calabrian chiles)
2 tablespoons pickled pepper brine
1 bunch basil (chopped)
1/2 bunch parsley (chopped)
1 lemon (zested)
To a large bowl or resealable gallon size bag, add chicken wings, salt, red chili flakes, pepper, ground fennel seed, olive oil, and garlic. Toss to coat chicken wings. Cover or seal and marinate chicken wings for 1 hour.
Preheat grill or grill pan to medium heat. Remove wings from marinade and grill for 45 minutes, until golden brown and crispy, and cooked through.
Transfer the grilled wings to a large bowl, add pickled peppers, brine, basil, parsley, and lemon zest. Toss to combine.
1. If you don’t like pickled peppers, add your favorite hot sauce or barbecue sauce and toss to coat.
2. If the wings get too dark, move them to the cool side of the grill, cover and cook for remaining time.
