Michael Symon is whipping up a meatball recipe that is perfect for your holiday dinner!

1 cup olive oil
1 pound ground beef
1 lime (zested)
1 clove garlic (peeled, grated)
1 piece ginger (peeled, grated, 1-inch piece)
1/4 cup scallions (thinly sliced)
1/4 cup cilantro (roughly chopped)
1/4 cup mint (roughly chopped)
1 egg
1/4 cup bread crumbs
flour (to dredge)
Kosher salt and freshly ground black pepper (to taste)
2 teaspoons hot sauce
1 cup sour cream
1/4 cup cilantro (roughly chopped)
1/4 cup mint (roughly chopped)
1 lime (juiced)
1 head bibb lettuce (leaves separated, to serve)

Heat olive oil in a shallow pan over medium heat.
In a large bowl add the beef, lime zest, garlic, ginger, scallions, cilantro, mint, egg and bread crumbs and gently mix to combine. Season with salt and pepper.
Form into 1-inch balls and dredge in flour. Place in the hot olive oil and fry until golden brown and cooked through, about 5-7 minutes. Remove to a paper towel-lined plate
For the Herbed Sour Cream: In a small bowl add the sour cream, hot sauce, cilantro, mint and lime juice and mix to combine.
Place a meatball and a dollop of sour cream in a lettuce cup and serve.
Tip: Saute your meatballs then finish in the oven at 375ºF for about 10 minutes or until cooked through if you don’t want to fry.
