Michael-Symon-BRICK-CHICKEN-WITH-MUSTARD-HOT-SAUCE-AND-DRUNKEN-ONIONS

ingredients

  • 3 pounds whole chicken, backbone cut out (spatchcock)
  • 2 tablespoons extra-virgin olive oil
  • 1 tablespoon coriander (toasted and ground)

DRUNKEN ONIONS

  • 3 small yellow onions (sliced into ½ inch thick rounds)
  • 4 tablespoons unsalted butter (melted)
  • 1 tablespoon dark brown sugar2 teaspoons freshly grated ginger
  • 2 tablespoons bourbon
  • kosher salt and freshly ground black pepper
  • Mustard Hot Sauce
  • 2 cups apple cider vinegar
  • 1 small red onion (peeled and quartered)
  • 1 large clove garlic (peeled and smashed)
  • 1 chipotle in adobo (plus 1 tablespoon of puree)
  • 3 tablespoons bourbon
  • 1 teaspoon toasted coriander seeds
  • 1/2 teaspoon paprika
  • 1 cup spicy brown mustard
  • 1/2 cup yellow mustard
  • 5 tablespoons pure maple syrup
  • 1 tablespoon soy sauce
  • 2 teaspoons kosher salt
  • 1 ½ teaspoons freshly ground black pepper
