Fry up some delicious halloumi cheese with this avocado salsa for a yummy summer appetizer!

ingredients
CRISPY HALLOUMI WITH AVOCADO SALSA
1/4 cup olive oil
12 slices halloumi cheese (1/2-inch thick slices)
SALSA
1/4 cup lime juice
1/2 tablespoon honey
1 cup avocado (peeled, pitted, small diced)
1 cup tomato (small diced)
1/3 cup scallions (thinly sliced)
1 tablespoon jalapeno (seeded, minced)
1/4 cup basil leaves (torn)
kosher salt and freshly ground black pepper (to taste)

directions
For the Halloumi: to a large sauté pan add olive oil and heat over medium-high heat. Add cheese and cook until crisp and browned, about 2 minutes per side. Remove to a platter and serve with salsa on top.
For the Salsa: in a large bowl add the lime juice and honey and whisk to combine. Add the avocado, tomato, scallions, jalapeno and basil and gently fold to combine. Season with salt and pepper.
Tip: salsa can be made up to one day in advance. Store in airtight container with a piece of plastic wrap pressed onto the surface of the salsa to prevent oxidation.
