Don’t be frightened! With just a few ingredients, you can create an amazing Ice Cream Pie!
FRIGHTFULLY FREEZING ICE CREAM PIE
3/4 cup all-purpose flour
1/2 cup unsweetened cocoa powder
1/4 teaspoon baking soda
4 ounces unsalted butter (softened)
1 teaspoon Kosher salt
1/3 cup sugar
1 teaspoon vanilla extract
2 pints mint chocolate chip ice cream (slightly softened)
non-stick cooking spray
Preheat oven to 350ºF. Spray a 9-inch pie dish with non-stick cooking spray.
In a small bowl, sift the flour, cocoa powder, and baking soda together.
In the bowl of a stand mixer fitted with the paddle attachment, cream the butter, sugar and salt together until light and fluffy, about 4 minutes. Add the vanilla extract and mix to combine. Scrape down the sides and bottom of the bowl. On medium-low speed, add the flour in 2 batches and mix until the dough comes together.
Flatten the dough into a disk, and then roll it out between 2 pieces of wax paper to form a 12-inch circle. Place the pie crust into your pie dish, pressing into the bottom and up the sides of the dish. Trim any overhanging crust. Place in the freezer for 15 minutes.
Remove the pie crust from the freezer and place in the oven until slightly crisp and cooked through, about 20 minutes. Remove from oven and let cool completely.
Into the cooked pie crust, add the mint chocolate chip ice cream and smooth the top. Place in the freezer until ready to serve.
Tip: For easy cutting of the pie, run your knife under hot water before slicing into the pie. The warm knife will easily cut through the cold ice cream.
