A simple & delicious dish you can make with just 5 ingredients and in under 5 minutes!

ingredients
PORK CUTLETS WITH SPICY BROCCOLI RABE
FIVE
1 pound pork tenderloin (cut into 8 pieces, pounded 1/2-inch thick)
1 bunch broccoli rabe
1 cup low-sodium chicken broth
1 tablespoon Dijon mustard
2 cloves garlic (minced)
PANTRY
1/2 teaspoon crushed red pepper flakes
3 tablespoons olive oil
kosher salt and freshly ground black pepper

directions
Put a large skillet over medium-high heat. Season the pork cutlets on both sides with salt and black pepper. Add the olive oil to the pan. Arrange the pork cutlets in a single layer and cook, without stirring, for 1 minute. Flip and cook, without stirring, for 1 minute. Remove to a platter.
Add the broccoli rabe, season with salt and pepper, and sauté for 2 minutes. Add the garlic, and red pepper flakes to the pan. Cook, stirring occasionally, for 1 minute. Add the chicken broth, mustard, and seared pork with its juices. Cook until the broccoli rabe and pork are cooked through and the sauce reduces slightly, about 2 minutes.
Serve the pork topped with broccoli rabe and pan sauce.
Tip: replace the pork with chicken or your protein of choice!
