These simple roasted carrots go with any meal!
ROASTED CARROTS WITH ZA’ATAR, YOGURT AND MINT
1 1/2 pounds carrots (peeled, cut into 3 inch pieces on an angle)
3 tablespoons olive oil
1 tablespoon Za’atar
1/2 bunch mint (to garnish)
1/2 cup Greek yogurt (to serve)
Kosher salt and freshly ground black pepper (to taste)
Preheat oven to 450ºF. Place carrots on baking sheet, season with salt and pepper and drizzle with olive oil. Toss to combine.
Roast for 20 minutes, turning occasionally, until the carrots are almost tender. Remove from the oven, sprinkle with Za’atar. Garnish with mint and serve with Greek yogurt.
Tip: A perfect weeknight side dish with minimal prep. This flavor combination works well for any roasted root vegetable.
