1 pound pole beans (trimmed)
2 tablespoons sesame oil
2 cloves garlic (peeled and sliced)
1/4 cup soy sauce
2 tablespoons fish sauce
1 lime (juiced)
1/2 teaspoon red chili flakes
1 tablespoons white sesame seeds (to garnish)
kosher salt and freshly ground black pepper (to taste)

To a large pot of boiling water add beans and cook for 2 minutes, until bright green and crisp. Remove to a bowl of ice water to stop the cooking process. Once cooled, remove beans to a towel and pat dry.
In a large cast iron skillet add sesame oil and heat over medium high heat. Add garlic and cook for 1 minute. Add beans and cook until charred and almost tender, about 5-6 minutes. Add soy sauce, fish sauce, lime juice and chili flakes and toss to combine until the sauce slightly caramelizes. Season with Kosher salt and freshly ground black pepper. Garnish with toasted sesame seeds. Serve immediately.
For the Toasted Sesame Seeds: place sesame seeds in small sauté pan over medium heat. Allow to cook until lightly toasted, about 3-4 minutes.
Tip: substitute with string beans, haricots verts, or broad beans.
