MIXED BERRY JAM
3 cups blackberries
3 cups blueberries
3 cups strawberries (hulled, roughly chopped)
1 1/2 cups sugar
2 lemons (juiced, zested)
Prepare 2 sterilized pint-size mason jars with lids.
In a large nonreactive saucepan add the blackberries, blueberries, strawberries, sugar, and lemon zest and juice. Bring to a simmer, allowing the berries to soften, about 5 minutes. Mash the berries using a wooden spoon or a potato masher. Allow to simmer until thickened and the sugar has completely dissolved, about 12-15 minutes. Pour into jars, leaving the top 1/4 of the jars empty. Secure the lids and allow to cool to room temperature. Refrigerate for up to 2 weeks.
Serve with biscuits!
Tip: 1. Use your favorite summer berries or fruit in this jam!
2. To sterilize the jars, place jars in a large pot, cover with water and bring to a boil. Allow to boil for 10 minutes then remove.
