This is no ordinary sandwich!

ingredients
PEANUT BUTTER BANANA BACON SANDWICH
1/2 pound bacon (12 slices)
1 pullman loaf (cut into 8, 1/2-inch slices)
3/4 cup smooth peanut butter
2 bananas (ripe, sliced lengthwise and then in half)
2 tablespoons unsalted butter (softened)

directions
Preheat oven to 400ºF.
On a parchment lined baking sheet, lay out the bacon and place in the oven to bake until crisp. Remove to a paper towel-lined tray and set aside.
Preheat panini press.
Take the slices of bread and spread 1 heaping tablespoon of the peanut butter on each slice. Add 2 sliced bananas to each slice. Arrange 3 slices of bacon on top of 4 of the slices of bread. Close the sandwich by placing the 4 remaining slices with banana on top of the bacon slices. Generously spread butter on both sides of the sandwich. Add sandwiches to the hot panini press. Cook until brown and crisp. Slice diagonally and serve.

  • Hiya Mikey! I used to bring peanut butter and banana sandwiches to work for lunch. My coworkers would say UGH! peanutbutter and bananas UGH Then one day someone asked me for a taste. And then the troops followed. So I ended up not bringing one sandwich, but at times two or three. Yummy! I’m going to try yours with the bacon; I’m salivating!! Thank you Mikey!
