Mario’s Caprese Salad is super quick and tasty!
1 pound colorful heirloom tomatoes (cores removed, sliced 1/4-inch thick )
1/2 pound cherry tomatoes (cut in half)
1 ball fresh mozzarella (6 to 8 ounces, 1-inch cubes)
1 small bunch basil (leaves torn)
flaky sea salt and freshly ground black pepper (to taste)
1 tablespoon red wine vinegar
1/4 cup extra-virgin olive oil
Arrange the tomatoes on a large plate or platter and scatter the mozzarella on top. Top with the torn basil and season with flaky sea salt and black pepper.
Whisk together the red wine vinegar and olive oil. Dress the salad with the vinaigrette and serve!
Tip: This salad is perfect to make into a sandwich for a picnic or to transport to a summer party.
