This Rigatoni with Sausage and Tomato is the perfect weeknight meal!
RIGATONI WITH SAUSAGE AND TOMATO
4 links Italian sausage
1 jar store-bought marinara sauce
1 pound dry rigatoni (cooked according to package directions)
1/4 cup fresh basil (torn to garnish)
Parmigiano-Reggiano (to garnish)
Kosher salt and freshly ground black pepper (to taste)
In a medium saute pan over medium heat, add the tomato sauce and sausage links. Simmer for 30-45 minutes for raw sausage (or until cooked through) and 10 minutes for cooked sausage. Remove the sausage and slice into rounds. Return the sliced sausage to the tomato sauce.
Toss the tomato sauce with the cooked rigatoni and garnish with basil and Parmigiano-Reggiano.
Tip: Perfect dish to use leftover meat. Add leftover sausage or shred chicken and add to the tomato sauce and serve.
