Grilled Chicken Tacos with Tomato-Mango Salsa
•4 chicken breasts (boneless skinless)

Taco Seasoning
•1 tablespoon chili powder
•1 1/2 teaspoon cumin
•1 teaspoon salt
•1 teaspoon pepper
•1/2 teaspoon paprika
•1/4 teaspoon garlic powder
•1/4 teaspoon onion powder
•1/4 teaspoon crushed red pepper flakes
•1/4 teaspoon oregano

Tomato-Mango Salsa
•2-3 Roma tomatoes (diced)
•1 medium-large ripe mango (peeled, pitted and diced)
•2 tablespoons red onion (minced)
•2 tablespoons fresh cilantro (chopped)
•2 tablespoons lime juice
•1 tablespoons lemon juice
•salt and freshly ground black pepper (to taste)

Quick Guacamole
•1 avocado
•1 teaspoon lime juice
•1/8 teaspoon salt

To Assemble
•tortillas (6-inch)
•2 jalapenos (sliced, optional)


1For the Grilled Chicken: Preheat grill or grill pan to medium-high heat.
2Season chicken with taco seasoning. Place chicken on hot grill and cook until charred on both sides and cooked through in the middle. Remove chicken to a cutting board and let rest for a few minutes. Chop or dice the chicken for the tacos.
3For the Tomato-Mango Salsa: To a small bowl, add tomatoes, mango, red onion, cilantro, lime juice, lemon juice, salt and pepper. Stir to combine.
4For the Guacamole: Cut avocado in half and remove the pit. To a small bowl, add avocado flesh, lime juice and salt. Mix well with a fork until blended.
5To Assemble: Toast tortillas on the stove until crisp. Top with guacamole, diced chicken, mango salsa, fresh cilantro, and jalapeno (optional).
