Shoestring Fries with Garlic and Rosemary MARIO BATALI

Make sure you make a big batch, because these will go fast!

ingredients
SHOESTRING FRIES WITH GARLIC AND ROSEMARY
vegetable oil (for frying)
2 large russet potatoes , peeled
2 large sweet potatoes, peeled
4 garlic cloves (peeled and thinly sliced)
4 sprigs rosemary (leaves only)
Kosher salt (to taste)

directions
Fill a Dutch oven with the vegetable oil, leaving 3 inches of space at the top. Heat the oil to 360ºF.
Using the julienne attachment on the mandolin, cut the potatoes into strips and fry in batches until golden brown. In your first batch of fries add your garlic and rosemary and fry until golden. Drain the fries on a paper towel lined plate and season with salt while still hot from the oil. Repeat with remaining potatoes until all are fried. Toss the fries, garlic and rosemary together adjust seasoning and serve immediately.
