Mario Batali’s Shrimp Po’ Boy is a great weeknight meal!

ingredients
SHRIMP PO’ BOY
1 1/2 pounds medium shrimp (peeled, deveined, tails removed)
2 cups flour (for dredging)
1/2 teaspoon Creole seasoning
3 large eggs
1 cup milk
2 cups panko breadcrumbs
1 teaspoon red pepper flakes
1 teaspoon garlic powder
1 teaspoon paprika
1/2 teaspoon dried oregano
1/2 teaspoon dried thyme
1/2 teaspoon onion powder
vegetable oil (for frying)
Kosher salt and freshly ground black pepper (to taste)
REMOULADE SAUCE:
1/2 cup mayonnaise
2 teaspoons capers (chopped, drained)
2 teaspoons spicy whole grain mustard
1 tablespoon parsley (chopped)
1/2 bunch scallion (thinly sliced, white and light green parts)
1 lemon (zested)
Kosher salt and freshly ground black pepper (to taste)
TO ASSEMBLE:
1 cup iceberg lettuce (shredded)
1 tomato (cored, thinly sliced)
lemon (cut into wedges, to serve)
4 French rolls (cut in half, toasted)

directions
In a large Dutch oven, preheat oil to 360ºF. Line a plate with paper towels.
Prepare three baking dishes. In the first baking dish, add flour and Creole seasoning. Season with salt and pepper. In the second baking dish, add eggs and milk, and whisk to combine. In the third baking dish, add bread crumbs, red pepper flakes, garlic powder, paprika, dried oregano, dried thyme, and onion powder, and mix to combine. Season with salt and pepper.
Dredge shrimp in flour mixture, shaking off any excess. Coat in egg mixture and dredge in bread crumb mixture, shaking off any excess.
Add to oil and fry until golden brown, about 2-3 minutes per side. Remove to a paper towel-lined plate. Fry in batches, if necessary.
For the Remoulade Sauce: In a small bowl, add the mayonnaise, capers, mustard, parsley, scallions, and lemon zest and mix to combine. Season with salt and pepper.
To Assemble: Spread remoulade sauce on the bottom half of the French roll. Top with shrimp, lettuce and tomatoes. Place top bun. Serve with lemon wedges.
Tip: For easy prep, use a store-bought Creole seasoning with the panko bread crumbs.
