Carla’s Smoked Salmon Sammies are so cute!
SMOKED SALMON TEA SAMMIE
8 slices pumpernickel bread (sliced 1/4-inch)
1 cup cream cheese (softened)
2 teaspoons freshly ground black pepper
4 ounces smoked salmon
4 eggs (hard boiled)
4 teaspoons capers (drained, finely chopped)
1 lemon (zested)
4 teaspoons parsley (finely chopped)
kosher salt and freshly ground black pepper (to taste)
In a medium bowl, combine cream cheese with black pepper and mix well.
Peel the hard boiled eggs, separating the egg whites from the yolk, and discard the whites. Over a small bowl, finely grate the hard boiled egg yolks and mix with the capers, lemon zest and parsley. Season with salt to taste.
To Assemble: Spread the cream cheese mixture on one side of each slice of pumpernickel bread and top with 1 slice of smoked salmon. Using a 1 1/2-inch round biscuit cutter, cut several circles out of the bread. While cutting the bread, keep the biscuit cutter in place and top with a sprinkle of the egg yolk mixture. Add one more layer of bread finishing with egg yolk mixture. Carefully remove the biscuit cuter and repeat with remaining slices of pumpernickel bread. Serve.
Tip: Use different shaped cookie cutters to make your party more festive!
