SPICE-RUBBED PORK CHOPS
1 recipe Spice Rub
4 pork chops (bone-in 1/2-inch thick)
3 tablespoons olive oil
Preheat a cast iron skillet with olive oil to medium-high heat. Rub the pork chops with the spice rub and place on cast iron skillet until charred and cooked through or a meat thermometer reads 145ºF.
Tip: Rub the pork chops, place in a zip top bag and refrigerate for a few hours for a deeper flavor. Be sure the meat comes to room temperature before grilling.
