This Spicy Cauliflower Hash could be a delicious weeknight meal!
SPICY CAULIFLOWER HASH
1/2 head cauliflower (grated)
1 medium carrot (finely diced)
2 jalapenos (finely diced)
2 shallots (finely diced)
2 garlic cloves (sliced)
1/2 tablespoon red pepper flakes
1/2 tablespoon dried rosemary
1/2 tablespoon dried thyme
2 tablespoons white wine vinegar
2 tablespoons olive oil
1 tablespoon parsley (to garnish)
kosher salt and freshly ground black pepper (to taste)
Heat oil in a large cast iron pan, until smoking. Add cauliflower in single layer, even layer and season with salt and pepper. Do disturb by stirring until the cauliflower is charred, about 2 minutes. Add carrot, jalapeno, shallot, garlic, and season with salt and pepper. Add thyme, rosemary and red pepper flakes, and stir until soft. Add vinegar and adjust seasoning if needed. Remove from heat and garnish with parsley.
Tip: Cauliflower is a great substitute for rice!
