We’re so on trend with these Sweet Potato Avocado Toast!

ingredients
SWEET POTATO AVOCADO TOAST
1 sweet potato (cut lengthwise into 1/4-inch slices)
2 tablespoons olive oil (divided)
2 avocados (peeled, pitted)
pickled red onion (to taste)
red chili flakes (to taste)
1/3 cup pepitas (toasted, to garnish)
flaky sea salt (to taste)
PICKED RED ONION:
2/3 cup cider vinegar
2 tablespoons sugar
1 teaspoon Kosher salt
1 red onion (peeled, thinly sliced)

directions
Place the sweet potato slice into the toaster and allow to toast on the longest setting twice.
Remove and top with shingled slices of avocado, pickled red onion, red chili flakes, pepitas and flaky sea salt.
For the Pickled Red Onion: In a small saucepan add the vinegar, sugar and salt and bring to a simmer. Allow to simmer until the sugar and salt dissolve.
Pour over the red onions in a bowl and allow to sit at room temperature for 45 minutes or until cooled to room temperature.
To Toast Pepitas: In a small saute pan over medium high heat, add pepitas. Toast, tossing continuously to avoid burning, until golden brown and fragrant, about 5-6 minutes.
Tip: Get creative! Top sweet potato slices with your favorite toppings for the perfect snack!
