The zoodles are oodles of fun!
1 carrot (peeled)
1 zucchini (washed, with skin on)
1 english cucumber (washed, with skin on)
12 yellow and red cherry tomatoes (cut in half)
1/3 Cup extra-virgin olive oil
3 Tbsp rice wine vinegar
2 Tbsp honey
1 Tsp low sodium soy sauce
1/4 Tsp white sesame seeds
1/4 Tsp black sesame seeds
1/8 Tsp ground ginger
salt and pepper (to taste)
1 Spiralizer (for noodles)
For the zoodles: Follow the spiralizer directions to cut the zoodles.
For the vinaigrette: In a bowl, add olive oil, vinegar, honey, soy sauce, sesame seeds, ginger and whisk until emulsified. Season with salt and pepper to taste.
For the salad: Place the veggies in a large bowl; salt and pepper lightly. Toss the salad with small amounts of the dressing at a time. Taste as you go so that you have just a right amount of dressing, but don’t overdress the salad. Serve immediately.
Tip: This vinaigrette would also be delicious as a chicken marinade!
